Easy make ahead foil packet meals for camping or just some at home fun outdoors or indoors!
Veggie Black Bean Foil Packets
1 Can Black Beans (Drained and Rinsed)
1 lb of potatoes (fingerlings, russets or sweet potatoes work well)
1 Red Bell Pepper (cut into strips)
1 Yellow Onion (cut into strips)
1 jar of your favorite salsa (I like salsa verde!)
1 Tbsp Homemade Taco Seasoning (recipe below)
Homemade Taco Seasoning
½ Tbsp Chipotle Chili Powder (or omit if you do not like spicy food)
½ Tbsp Chili Powder (or 1 Tbsp if you omit Chipotle)
1 tsp Ground Cumin
½ tsp garlic powder
1 tsp paprika (smoked paprika if you have it)
½ tsp dried oregano
¼ – ½ tsp kosher salt
7-10 turns of fresh cracked pepper
Bake for 25 minutes at 425F in an oven or grill for about 25 minutes or until the potatoes are tender.
Chocolate Banana Foil Packets
Ripe Bananas (Yellow or slightly brown)
Chocolate Chips (mini, milk chocolate, semi-sweet, dark – anything you like!)
Additional Toppings (Optional)
Crushed Graham Crackers
Peanut Butter Chips
Cut banana down the middle lengthwise but do not cut all the way through – this is where the chips will sit. Add chocolate chips to your hearts desire.
Cook at 425F in an oven or grill for 5-10 minutes or until your chips have melted and the banana is soft. Top with any additional toppings you would like.
